Typical coffee processing involves removing the bean from the fruit and washing to remove all residual fruit off before roasting, whereas honey processed coffee is made by keeping the “mucilage” of the fruit intact after washing it.
The remaining mucilage creates an intensely fruity and sweet flavour unlike any other coffee.
